Jammy tomatoricotta tart
A craggy, golden tart for the stretch of summer when tomatoes taste like sunshine.
Gather
- 1 sheet all-butter puff pastry
- 1½ cups whole-milk ricotta
- 2 tbsp finely grated parmesan
- 4 ripe heirloom tomatoes
- 1 tbsp extra-virgin olive oil
- ½ cup fresh basil leaves

Heat the oven to 425°F. Unfold the pastry onto a parchment-lined sheet pan and score a one-inch border.

Stir ricotta, parmesan, a pinch of salt, and several turns of pepper. Spread inside the border.

Layer tomatoes over the ricotta. Drizzle with oil and bake until deeply golden, 35–40 minutes.

Rest for ten minutes, then tear basil over the top and finish with flaky salt.
The tart is happiest served warm, not piping hot. Pack leftovers for tomorrow’s lunch.
